Este libro se basa en artículos seleccionados de sesiones magistrales y simposios impartidos en el 16º Congreso Mundial de la Unión Internacional de Ciencia y Tecnología de Alimentos (IUFoST), celebrado en Foz do Iguaçu, Brasil, en agosto de 2012. El tema del Congreso fueron los desafíos que enfrenta la ciencia de los alimentos tanto en las regiones desarrolladas como en las regiones en desarrollo del mundo. Los simposios contaron con destacados oradores principales y plenarios de renombre mundial y jóvenes investigadores, y las sesiones técnicas cubrieron todo el espectro de la ciencia y la tecnología de los alimentos básicos y aplicados, incluidas las cuestiones y la educación del consumidor, las dietas y la salud, los alimentos étnicos y la investigación y el desarrollo. |
