Esta es la primera recopilación de referencia completa sobre la clase de sustancias de los glucosinolatos. Este manual presenta al lector los glucosinolatos que contienen azufre (S-glucósidos), una clase de metabolitos secundarios de casi todas las plantas del orden Capparales, en particular de la familia Brassicaceae (por ejemplo, brócoli y otras coles), derivados de la glucosa y un aminoácidos. El libro ilustra la variedad natural de estructuras de glucosinolatos, principalmente derivadas del aminoácido precursor. Los capítulos describen la rica bioactividad resultante de los glucósidos, por ejemplo como agentes anticancerígenos, insecticidas, nematicidas, fungicidas, sus posibles efectos fitotóxicos, actividad antimicrobiana y su posible papel en enfermedades neurodegenerativas y la salud humana. Se introducen diferentes métodos para la extracción, caracterización, cuantificación y procesamiento de los glucosinolatos y se discuten sus posibles aplicaciones. También se aborda brevemente el destino de los glucosinolatos durante el procesamiento de alimentos.
